Joseph Mellot's flagship Pouilly-Fumé delivers the expected level of concentration and complexity. The grapes come from vines, with an average age of over 30 years, that are grown on Kimmeridgian marl soils. The wine is fermented slowly in oak barrels and aged for about a year, much of it in contact with the lees, prior to bottling. Forceful with minerally fruit and a whiff of tell-tale gun-smoke and flint, a wine that could define the appellation and gain converts to this racy style of Sauvignon Blanc.
