4 cocktails for National Rum Day

Today, around the country we will see the nations bartenders serving Mojitos, Piña Coladas and Daiquiris in celebration of National Rum Day. Of course, here at Matthew Clark we love rum 365 days a year but it's always nice to set aside a day to celebrate the joys of a single category.

This months featured spirit Rolling Calf is the latest addition to a category filled with variety and versatility. Made from a blend of premium Caribbean rums with a mix of flavours and spices. The blend incorporates rums from Trinidad and Barbados specially selected by Master Blenders.

National Rum Day is a great excuse to try something new in the category. With that in mind I asked our friends over at Rolling Calf to share with us some of their cocktails suggestions. They have had some specially created by mixologist Michele Tuveri to bring out the best in this adventurous spirit. Dead Eyes Spell Cocktail

Ingredients

  • 50ml Rolling Calf
  • 20ml lime
  • 20ml sugar
  • 10ml elderflower cordial
  • 1 passionfruit
  • Ginger ale

Method

Add the Rolling Calf, Lime, Sugar and Elderflower cordial into a Boston shaker filled with ice. Scoop the innards of the passion fruit and squeeze the juice into the shaker using a strainer and the back of a spoon. Shake and strain into a tumbler filled with ice. Top up the drink with ginger ale and garnish with burnt flowers.

Zombie Mule

Ingredients

  • 50ml Rolling Calf
  • 15ml lime
  • 15ml grenadine
  • 10ml orange juice
  • 10ml pineapple juice
  • Dash of Tabasco
  • Ginger ale

Method

Add all ingredients excluding the ginger ale into a Boston shaker filled with ice. Shake and strain into a highball glass filled with ice. Top up the drink with ginger ale and garnish with a wedge of lime.

Voodoo Colada

Ingredients

  • 50ml Rolling Calf
  • 25ml lime
  • 25ml rhubarb syrup
  • 1/4 of a ripe mango
  • 50ml pineapple juice

Method

For this one you will need your blender. Add all ingredients into your blender along with a healthy scoop of ice. Blend for around 10-15 seconds ensuring the ice is crushed and the mango is fully blended into the mix. A great tip with this one is to use a whole mango and scale up the ingredients to make 4 at once or a pitcher.

Calf Blood

Ingredients

  • 50ml Rolling Calf
  • 25ml lime
  • 15ml sugar
  • Teaspoon of cherry marmalade
  • Teaspoon of cherry vinegar

Method

Add all of your ingredients into a Boston shaker filled with ice. Shake and strain into a Coupe or Margarita glass over crushed ice. Garnish with a cherry. Don't have a bottle of cherry vinegar? You can make your own by adding a cup of pitted and chopped cherries to a cup and a half of cider vinegar, allow to soak over night and strain off the whole fruit.
