The WestRoom in Edinburgh is a small but perfectly formed bar with a reputation for serving great food and drink. Located in the heart of the West End, the venue has a homely, local feel with friendly staff and a relaxed ambience; the menu focuses on ‘the best of British’ with locally sourced, high quality, seasonal fare.

Once you have a winning wine list, training comes next; the ability to communicate with guests clearly and with expertise will really drive wine sales and profit.

Sophie Birkbeck – Wine Development Specialist

Here at the WestRoom we have always had a fantastic reputation for our drinks portfolio, but we felt that there was an opportunity to grow sales by focusing on a more bespoke wine selection. We worked closely with Sophie, one of Matthew Clark’s Wine Development Specialists, to craft a new list that gave us an increased point of difference from other bars.

This we felt was very important in the saturated city-centre marketplace. We have now introduced a broader range of grape varieties including New Zealand Riesling, Italian Fiano, Carmenère from Chile and old vine Garnacha from Spain. All are offered by the glass, carafe or bottle, and priced proportionately to encourage our guests to experiment with their selections.

We’ve complemented this more bespoke list with regular staff tastings and training sessions so that our team knows how best to recommend the new wines. We focus on comparing these new wines’ flavour profiles to the more recognisable styles of the more widely-known grape varieties; by creating this link we can suggest wines for our guests to try.

Our customers have really responded well to our recommendations and we have noticed an upswing in interest in the wines on our drinks menu.
