The brother and sister duo, Josh and Holly Eggleton have earned a reputation for quality with Josh managing the kitchen, and Holly, the front of house. A testament to great food with a welcoming atmosphere, The Pony & Trap has held a Michelin Star since 2011 and was ranked second in the Publican’s Morning Advertiser’s Top 50 UK Gastropubs in January 2015 – it was third last year.

The pub champions a ‘field to fork’ ethos, serving food sourced as locally as possible from suppliers around the Chew Valley and the South West.

With a little preparation, extra sales can be gained simply by pairing desserts with wine and communicating this to diners

 At The Pony & Trap, we aim to enhance our customers’ dining experience by matching wines to our dishes, which takes the form of wine flights to accompany our daily-changing tasting menu and also recommending wine to accompany dessert.

This is often an area for extra sales that gets overlooked and as we are printing our menu every day, it takes very little time to add our recommendation to the menu.

We have four dessert wines, ten fortified wines and a demi-sec Champagne to choose from. This range gives us plenty of scope to find a perfect match for any of the six or so dailychanging desserts and speciality cheeses we serve. Luckily, we all really enjoy and appreciate dessert wines; there are worse jobs that have to be done running the Pony and Trap than sampling desserts and wines. If we do ever get stuck, we ask Zoe to help with the recommendation.

We have always linked the sales of Port to our cheeseboard by providing an inclusive price alongside a cheeseboard-only price. When we realised just how much incremental sales we were gaining here, we realised we were missing a trick by not doing the same with the desserts. From that point onwards, we haven’t looked back, it was one of the simplest things to gain extra sales and gives our customers a great experience on which to finish their meal

Since we started to recommend dessert wines in this way, we have seen sales of our dessert, fortified and demi-sec Champagne increase with double-digit growth, year-on-year – it’s a no-brainer!
