About the wine maker
Fontana Candida, the most renowned winery in Frascati and one of the oldest, is led by winemaker Mauro Merz, who many years ago fell in love with the Frascati region, making it his mission to bring it back to its full past glory.
‘Frascati at its origins was a wine of outstanding quality and grape-growers created one of the most high-maintenance, low-yielding traditional vine training systems ever seen.’ Mauro says, ‘Your Frascati had to be really good, since very demanding and exclusive buyers, the owners of the Roman trattorias, dictated the market. They were spoilt for choice and would only buy the best casks for their clients.’
Today, Mauro dreams of bringing Frascati back to its golden age. ‘Though it is impossible to reinstate some of the lost traditions,’ he explains, ‘we can achieve the same quality standards with a modern approach’.
‘Everything starts in the vineyards’, so every vineyard is trained with high-density, low-yield systems; extensive research has been done to select and reproduce the best clones of Malvasia, the aromatic component in the Frascati blend; great care is taken to get the grapes to reach full ripeness in perfect state. ‘We are blessed with wonderful grape varieties, great soil and weather. Frascati is an amazing territory and we want our wines to be the standard-bearers for its potential.’
