Shannon Merlot, Elgin Valley

The Merlot grapes are sourced from a small three hectare vineyard, planted on Table Mountain Sandstone; divided up into five different parcels each with its own respective clone and these are all picked together for a five way clonal co-ferment, this occurs after a cold maceration of about five days at temperatures up to 30ºC. The wine is racked and left to complete its malolactic fermentation and maturation in old four to five year old French oak barriques for nine months. Considerable emphasis is placed on maximising the different French and Italian Merlot expressions in the vineyard even though they are vinified together. The wine has a fragrance of ripe red fruits such as plum and dark cherry and an earthy complexity; the palate shows a minerally freshness with a well-integrated ripe tannins.
