Kleine Zalze Sangiovese, Coastal region

Sangiovese from the cooler slopes around False Bay in Stellenbosch was blended with grapes from warmer vineyard sites in the Paarl coastal region. Sangiovese has good natural acidity levels, so the grapes were left to hang to produce a soft, ripe tannin structure in the finished wine. After a six-day cold maceration, the wine was fermented in open tanks with regular pumping over; the wine was aged for 16 months in French oak barrels, about 20% of which were new. The wine shows fragrant wild spicy, cranberry fruit aromas on the nose and has a layered tannin structure typical of the variety.
